Taco Tators

These are easy and yummy.
Serves 4

4 medium russet potatoes
11/4 ounce old el paso
taco seasoning
3 tbls. cornmeal
1/4 cup olive or vegetable oil

Heat oven to 450 degrees
Pierce potatoes with fork.
Place on a microwave-safe paper towel or roasting rack in mircowave.
Microwave on high 6-8 minutes turning once half way through cooking
time. In a reasealable plastic food storage bag, combine taco mix and
cornmeal; mix well. Cut cooked potaroes lengthwise into quarters; place
in a large shallow dish. Drizzle with oil and toss to coat. With a
slotted spoon, place potatoes in plastic bag and shake to coat. Arrange
potatoes on an ungreased cookie sheet and bake for 8 mins. or until
golden brown and tender.
