Irish Potato Cakes
1/2 c. butter 4 eggs 2 c. sugar 1/2 c. milk 1 c. mashed potatoes 2 c. flour 1 tsp. baking powder 1 tsp. baking soda 1 tsp. vanilla 1/2 c. coconut 1 c. nuts Cream butter, eggs, sugar and milk. Prepare mashed potatoes and add. Sift dry ingredients. Add to creamed mixture. Beat until smooth; add coconut, vanilla and nuts. Mix thoroughly. Bake in a 350 degrees oven about 35 or 45 minutes. Irish Potato Cake Icing: 1 c. canned milk 1 c. sugar 1 c. coconut 1 tsp. vanilla 1 c. nuts 3 egg yolks 1/2 c. butter Cook until thick and thoroughly mixed. Frost cake when cool.
