Baked Eggs In Potatoes

Overall time 2 hours.

Serves 4

Ingredients

4 large [10 ounce] potatoes
2 ounces butter
salt and pepper to taste
2 ounces cheese [grated]
4 small eggs
4 tbsp. double cream
2 teasp chives [chopped]

Directions

Preheat oven to 400 [if using gas oven #6]

Scrub and dry the potatoes and push a metal skewer lengthways through each one. [this helps quicken the cooking]

Place on a baking tray and rub a little of the butter over the skins.

Bake for 1-1 1/4 hours.

Cut a slice lenghthways off each potato and SCOOP out the insides, leaving a shell about 1/2 inch thick.

Mash the scooped out potato plus any from lids in a bowl with the remaining butter and seasoning.

Grate cheese and beat into potato mixture.

Press the mixture back into the potato shells, leaving a hollow in the centre large enough for an egg.

Place on baking tray.

Carefully break an egg into each potato.

Season and spoon the cream over.

Return to the oven and bake for 8-10 minutes till eggs are lightly set.

Sprinkle the chives over and serve hot.

A very simple recipe for the kids to do for Mother on Mother's Day.

Serve with choice of chicken, beef, ham.
