SHRIMP WITH PENNE

4 roasted bell peppers
1/2 cup parsley
1/4 cup dry white wine
2 cloves garlic
1 tsp dried oregano
1 pound large shrimp, peeled and deveined
4 cups penne pasta, cooked
black pepper
In blender, puree first 5 ingredients. In saucepan, bring pepper mixture to a
boil. Add shrimp, reduce heat. Simmer until shrimp is opaque, 5 min. Serve sauce
over penne pasta. Season with pepper to taste. GARNISH WITH ADDITIONAL ROASTED
PEPPERS AND A SPRIG OF PARSLEY. Makes 4 servings.*
