Salmon Ring

This salmon loaf gets its ring shape from a casserole dish with glass in the center.
Canned tuna may be used, also, instead of salmon.

Ingredients
3 eggs, beaten
2 cups [1-lb. can] red salmon, drained and flaked
1-cup fine dry breadcrumbs
1/2 cup [1 stalk] chopped celery
1/4 cup minced onion or 2 tablespoons instant minced onion
1 tablespoon lemon juice
3/4-cup milk
Directions:

In 1+1/2 quart casserole, combine all ingredients; mix well.
Move mixture away from center and place glass in center to
make the ring shape.
Cook, UNCOVERED, 8 minutes or until mixture around glass is set.
Remove glass and invert onto serving plate.
TIP: You can use 2 cans [7 ounces each] tuna fish for salmon.
The center of the ring can be filled with creamed peas or creamed corn,
or other vegetable before serving.
Another choice is to warm a can of mushroom, celery, or other creamed soup
[UN-DELUTED with milk] of choice and spared into ring to over-flow the
salmon ring before you fill will vegetable of choice.
