Catfish-Hushpuppy Kabobs, Deep-Fried and On A Stick

1 lb catfish nuggets, approx 2-inch pieces
2 1/2 cups self-rising cornmeal, divided
1/4 cup diced red onions
1/4 cup cream-style corn
1/4 cup chopped jalapeno peppers approx. 5 large peppers
1 1/2 cup buttermilk
1 egg
4 cups canola oil
Coat catfish pieces in 1 1/2 cups cornmeal and set aside. In a bowl, mix
together red onions, cream-style corn,
chopped peppers, buttermilk, egg and 1 cup of self-rising cornmeal. Drop
hushpuppy mix by the tablespoonful into
in canola oil heated to 375° F in a deep-fryer and fry until golden brown. Fry
the catfish until golden brown and cooked.
Drain, cool slightly and place hushpuppies and catfish alternately on a wooden
stick.
Serve 6-8.
