Southern Stuffed Sole

Elegant and easy!
This luscious layered sole is faster and easier than
rolling fillets around dressing.
Simply spread the filling on frozen fillets; then cook in microwave or oven.
Vary the flavor by using your favorite nuts in place of pecans.

Ingredients

1 pkg. [400 g] frozen Catch-of-the-Day Sole Fillets
1/4 cup cream cheese, softened
1/2 cup toasted soft bread crumbs
1/4 cup pecans or [your choice of favorites, walnuts, almonds]
2 tablespoons parsley
1/4 teaspoon each of salt, pepper, grated lemon rind from 1/2 lemon
paprika to taste

Directions:

Place half of fillets in shallow baking dish or microwaveable casserole.
Combine cream cheese, bread crumbs, nuts, parsley, salt, pepper and lemon peel.
Spread on fillets in casserole.
Top with remaining fish; sprinkle with paprika.
Squeeze other half of lemon over top.
Bake in 400F oven for 15 to 20 minutes or until fish is flakes easily with a fork; or
microwave, covered, at HIGH for 7 to 9 minutes.
Let stand, covered, for 5 minutes before serving.

Makes 4 servings.

Per serving; about 175 calories, 16.5 grams protein,
10.1 grams fat, 4.6 grams carbs.
