Shrimp Bruschetta

Ingredients
6 ounces [about 1 cup] diced cooked shrimp
1 cup shredded non-fat or reduced-fat mozzarella cheese
3/4 cup chopped fresh spinach
3/4 cup chopped plum tomatoes [about 2+1/2 medium]
1/4 cup chopped scallions
1 teaspoon crushed fresh garlic
1 teaspoon dried oregano
1 long, thin loaf French bread [about 48-1/2 inches when sliced]
Directions:

Combine the shrimp, cheese, spinach, scallions, garlic, and oregano
in a medium-sized bowl, and stir to mix well.
Slice the bread into 48 [1/2 inch] slices.
Arrange the slices on a baking sheet, and bake at 300F for 12 to 15 minutes,
or until crisp and dry.
Spread each slice with 1 tablespoon of the shrimp mixture.
Increase the oven temperature to 400F and return the appetizers to the oven
for 5 minutes, or until the cheese is melted.
Arrange the appetizers on a serving platter, and serve hot.
