Cobb Salad Sandwich
 




Ingredients:
3 cups coarsely chopped rotisserie chicken meat, chilled
1 cup chopped tomato
1 cup chopped romaine lettuce
2 hard-cooked eggs, chopped
1/4 cup chopped cooked bacon
1/4 cup crumbled blue cheese
1/4 cup blue cheese dressing
6 sweet French rolls, hollowed out



Directions
Stir together chicken, tomato, lettuce, eggs, bacon, cheese and dressing; mound into rolls. Wrap tightly and refrigerate until ready to pack or serve. Makes 6 sandwiches. Make-ahead tip: You can make this the night before and enjoy for lunch the next day.
