Healthy Tuna Salad

Ingredients:
8 oz. yogurt, plain low-fat
1/4 cup parsley, chopped
1/2 tsp. white onion, minced
1 tsp. fresh dill, chopped
2 cups green beans
1 medium Boston lettuce
1/2 cup American cheese, cubed
1 large tomato, cubed
12 oz. tuna, water-packed, drained
12 cucumber slices
Parsley for garnish
Directions:
In a bowl, combine yogurt, parsley, onion, and dill. Cover and chill. Cook green
beans in salted boiling water until done and drain. Chill quickly in ice water
and drain well. Clean and dry lettuce. Cut into bite-sized pieces. In a large
bowl, combine lettuce, green beans, and cheese. Spoon dressing over salad and
toss. Add tomato. Flake tuna into the salad bowl. Gently toss salad. Garnish
salad with cucumber slices and parsley.
