Green Pea Salad

This can be made lower fat by substituting fat free salad
dressing for the mayonnaise, and reduced fat cheese.

Ingredients:

1 pkg. frozen small green peas
1 sm. block Velveeta type cheese, cubed
1/2 sm. onion, chopped fine
3 stalks celery, chopped fine
2 Tbsps. pickle relish - I use dill relish but sweet is fine.
2 hard boiled eggs, chopped
Mayonnaise to mix - I have no idea how much I use.

Directions

Thaw the peas, and rinse in COLD water.
Drain well, and empty into bowl.
Add cubed cheese, onion, celery, and pickle relish. 
Season to taste. Add eggs, and mix to blend.
Add enough mayonnaise to bind together, you don't
want too much, or it will be overpowering.

Chill a few hours to blend flavors. 
Stir well before serving.

If I'm taking this to a potluck or church dinner, I use a few red
onion rings and some paprika to garnish. Depending on how
fancy you wanted to get, you could use sliced black olives or hard
boiled eggs and grated cheese on the top, too.
