Applesauce Spice Cake

1 c. butter, softened
2 c. super fine sugar
2 c. applesauce
3 c. flour
2 tsp. cinnamon
1 3/4 tsp. baking soda
1 c. coarsely chopped walnuts
1 c. raisins
1 tsp. vanilla
No eggs!
Preheat oven to 325 degrees and spray a 9 inch tube pan well with Pam and flour
it also. Cream butter and sugar thoroughly until light and fluffy, then fold in
applesauce. Don't worry if the ingredients don't mix completely.
Sift flour, spice, and baking soda together. Remove 1/4 cup flour mixture and
dredge nuts and raisins in it. Fold remaining flour mixture in butter/sugar,
then add vanilla and the nut/raisin mixture. Mix well before pouring into pan.
Bake for 1 1/2 to 1 3/4 hours in oven. Test for doneness with toothpick. Let
cool slightly, loosen sides of pan and turn out cake onto a baking rack. Cool
completely before icing.
--FROSTING--
1 c. brown sugar
1 tbsp. butter
1 c. powdered sugar
2 tbsp. milk with a little sour cream mixed in
Melt all together in saucepan and add 1 teaspoon vanilla. Cool and pour over
cooled cake. This cake is even better if made ahead of time.
