Lamb Koftas
with
Minted Yoghurt Sauce

Ingredients

Canola oil for brushing

1 cup fresh white breadcrumbs
1 egg
1 onion, finely chopped
1 clove garlic, crushed
1 tablespoon chopped mint
1 teaspoon ground cumin
1 teaspoon ground turmeric
1/2 teaspoon cinnamon
1/4 teaspoon chilli powder

Minted yoghurt sauce

2 tablespoons chopped mint
1/2 teaspoon crushed garlic

Directions;

Soak skewers in cold water for 30 minutes. Meanwhile, make the koftas.
Combine all ingredients in a bowl. Mix well. (This can be done in a food processor).
For each kofta, shape 1/4 cup of lamb mixture around each skewer, forming a
10-cm-long sausage.
Heat grill or barbecue.

Brush baking tray or grill plate lightly with oil. Grill koftas or cook on barbecue over a medium
heat for 12-15 minutes until cooked through.

Combine minted yoghurt sauce ingredients and mix well.
Transfer to a bowl and serve with lamb koftas.

Cooks note: Lamb Koftas are delicious served with pita bread and tabbouli
