Cedar Plank Barbecue Salmon

One of the reasons we all love summer is that you can have a fabulous feast without ever setting a table. Summer meals are meant to be fresh. Whether you serve them on paper plates, a picnic table or a blanket by the beach, if the food is fresh and you've got a little help from your fabulous recipes, it will be a real treat.
So visit awhile, and maybe, just maybe, you can find something to make your mouth water and your taste buds turned up a notch or two to get you in the mood for super cookouts.
Get started to make a new dimension in cooking, it may add both versitility and economy to your eating enjoyment.

Ingredents

Use planks with 3/4 " - 1" thickness.
An 8" x 10" plank will accommodate 4 average sized salmon steaks.
"Construction" grade planks work best and can be purchased from a building supply store.

SOAK planks overnight in water.
Weigh them down to keep them submerged.

Pre-heat grill to High.
To prepare salmon brush with olive oil.
Season with salt and pepper, a sprinkle of dill and crushed garlic.
Lay plank on grill and close cover.
After 3-4 minutes, if the top of plank is dry, lay salmon fillets on top of plank with onion rings.
Turn heat down to Low.
Close cover and cook salmon for 10-12 minutes, or until fish is cooked through, and flakes easy.
Sprinkle water on plank to control flames.
Serve with sliced lemon.
Serve with favorite salad and grill toasted sour-dough bread.
