5 or 6 med. potatoes, scrubbed
1 1/4 c. evaporated milk
2 egg yolks, beaten
2 tbsp. melted butter
1/2 c. grated American cheese
Dash of salt and pepper

Boil unpeeled potatoes in salted water until tender. Drain, remove
skins and mash. Add 1 cup milk to give desired consistency; beat until
fluffy. Season with salt and pepper. Heap potatoes in greased pie
plate; make crater in top, the size of custard cup.

Combine egg yolks, butter, 1/4 cup milk, cheese and a dash of salt and
pepper. Pour into crater. Bake in 450 degree oven for 15 minutes or
until topping browns, cracks and runs down sides of "volcano."
