Sweet Potato Pie

Ingredients:
5 med. sweet potatoes
3 to 4 quarts of water
1 1/4 sticks of butter, melted
1 1/2 C. of sugar
2 1/2 tsp. of nutmeg
2 tsp. of vanilla
3 eggs
1 1/2 tbls. of baking powder
1/3 C. of evaporated milk
Wash and peel the sweet potatoes. Place in a deep boiler, covering with
water. Simmer for 60 minutes until ready for mashing. Cream the
potatoes, removing all of the lumps. Add the butter, sugar, nutmeg,
vanilla and eggs, mix well. Add the baking powder to the milk, and stir
into the potatoes. Pour the ingredients into pie shells and bake at 350
degrees F. for 50 minutes or until firm. Cool and serve. Makes 12 to 14
slices.
