Bountiful Harvest Soup

It is made with Butternut Squash, apples, ginger, onions and a pinch of spice
to have you salivating....Although this requires a bit of preparation, I can
tell you
it is soooo worth it...
Here is what you will need:
2 medium Butternut Squash ( cut into chunks)
3 medium onions (cut in quarters)
1 small ginger root (peeled and sliced)
Add these to a roasting pan and sprinkle with 3 tablespoons of olive oil and
1 teaspoon of ground cinnamon.
Place in a 450 oven for 1 hour... after 30 minutes be sure to turn over veggies...
Next peel 6 apples with the skin intact - macs or any tart apple and add to
a small pot with ½ cup apple cider or
½
cup of apple juice (I used cider). Simmer for 20 minutes..
In a crock pot or soup pot, add 8 cups of vegetable broth or chicken broth.
( I prefer vegetable broth that comes in a box, 2 boxes will do)
Once veggies are all cooked add to crock or soup pot and simmer for 1 hour.
Then once everything is cooked add 1/2 teaspoon of nutmeg and 1 teaspoon of
cinnamon
and puree all the soup...Return it to pot and simmer 5 min.
